Where Our Products Come From
Know Your Butcher. Know Your Meat.
At Carolina Butcher Shop and Meat Provisions, we believe you should know where your food comes from.
We work hard to source quality beef, pork, chicken, seafood, dairy, produce, and locally made products from suppliers and producers we trust. Our goal is simple: put better products in our cases and give our customers something they can feel good about feeding their families.
We aren’t interested in filling our coolers with just anything. We look for quality, consistency, flavor, and suppliers who stand behind their products.
🥩 Our Beef
Certified Angus Beef®
Our beef program features Certified Angus Beef® Prime and Choice beef.
Certified Angus Beef® has standards that go beyond simply being Angus. Only beef meeting the brand’s quality specifications earns the Certified Angus Beef® name.
That means better marbling, tenderness, consistency, and flavor.
From hand-cut ribeyes and New York strips to filets, briskets, roasts, burgers, and specialty cuts, our butchers cut and prepare beef fresh for our customers.
Australian Wagyu
When we want to offer something a little different, we also carry premium Jack’s Creek Australian Wagyu.
Known for exceptional marbling and rich flavor, Wagyu gives our customers another premium option for special occasions—or just a really good steak night.
🐖 Our Pork
We proudly feature Prairie Fresh® USA Prime® Pork.
Prairie Fresh pork is known for quality, consistency, tenderness, and flavor.
Our pork selection includes everything from chops, tenderloins, ribs, Boston butts, pork belly, roasts, and other specialty cuts.
We also use quality pork in many of the sausages and value-added products we make right here in our butcher shops.
🐔 Our Chicken
Our fresh chicken program includes poultry from Amick Farms.
We offer fresh chicken breasts, thighs, drumsticks, wings, whole chickens, leg quarters, and other cuts throughout the week.
Our team also turns fresh chicken into customer favorites like:
Chicken Kabobs
Jalapeño Popper Chicken
Chicken Cordon Bleu
Marinated Wings
Stuffed Chicken
Chicken Sausages
Other rotating house-made specialties
🌭 Sausage Made In-House
One of the things that makes our butcher shops different is the amount of product we make ourselves.
Our sausage is made in-house by our butcher team using quality meats, seasonings, and recipes we’ve developed for our customers.
Depending on availability, you’ll find flavors like:
Mild Country • Hot Country • Mild Italian • Hot Italian • Kielbasa • Traditional Bratwurst • Cheddar Brat • Jalapeño & Cheese • All American • Maple Cranberry • Tomato & Mozzarella • Deluxe Pizza • Fajita • Chicken Bacon Ranch • Philly Cheesesteak • Cheddar Brisket and more.
If you haven’t tried our house-made sausage, you’re missing one of the best parts of the shop.
🐟 Seafood
We work with trusted seafood suppliers including Crazy Fish International and Coast 2 Coast to bring our customers a rotating selection of seafood.
Depending on season and availability, that may include:
Salmon • Shrimp • Snow Crab Legs • Scallops • Fish • Shellfish and other seafood favorites.
Because seafood availability changes throughout the year, our selection may change from week to week.
🧀 Cheese & Dairy
We take our cheese seriously, too. Our shops carry a wide variety of specialty cheeses and dairy products, including products from Ashe County Cheese and Homestead Creamery.
Ashe County Cheese — North Carolina Made
We’re proud to carry Ashe County Cheese, made right here in North Carolina. Located in the Blue Ridge Mountains of West Jefferson, Ashe County Cheese has been producing cheese in North Carolina for generations.
Their cheeses give us the opportunity to offer our customers a quality North Carolina-made product while supporting another business from our home state.
Our selection includes a rotating variety of traditional and specialty flavors, such as:
7-Year Cheddar • Buffalo Jack • Carolina Bleu • Hickory Smoked Cheddar • Cajun Cheddar • Garlic Cheddar • Habanero Cheddar • Mild Cheddar • Sharp Cheddar • Garlic & Parsley • Colby Marbled • Ghost Pepper Smoked • Jack & Dill • Four Pepper Jack • Mango Fire • Pepper Jack • Tomato Basil
Selection may vary by location and availability.
Homestead Creamery
We also carry products from Homestead Creamery, bringing another selection of quality dairy products to our customers.
Whether you’re building a charcuterie board, topping burgers, pairing cheese with one of our steaks, or just looking for something different to try, check out the cheese selection while you’re in the shop.
We’re always looking for great products—especially products made here in our region—that deserve a spot alongside the meats in our cases.
🌭 Carolina Favorites
We believe a butcher shop should support other businesses whenever it makes sense.
That’s why you’ll also find products from familiar regional companies such as:
Carolina Packers / Bright Leaf
Stevens Sausage
along with other North Carolina and regional products throughout our stores.
If it’s something we think belongs on a Carolina grill, there’s a good chance we’ll give it a shot.
🥬 Produce & Fresh Ingredients
We work with produce suppliers, including Combs Produce, to bring in fresh vegetables and ingredients used both for retail and for the products we prepare in-house.
Fresh peppers, onions, herbs, vegetables, and other ingredients go into many of our kabobs, stuffed meats, sausages, marinades, and prepared items.
🔪 Prepared Right Here
Where our products come from matters.
But what happens after they arrive matters just as much.
Our butcher teams cut, trim, grind, season, stuff, marinate, package, and prepare a large portion of what you see in our cases.
That includes:
Fresh-Cut Steaks
Fresh Ground Beef
House-Made Burgers
House-Made Sausage
Kabobs
Stuffed Chicken & Pork
Beef Tips
Marinated Wings
Pinwheels
Specialty Cuts
